Fresh Island Fish
The season, weather conditions, and "luck of the catch" determines the availability of Fresh Island Fish. Up to nine Fresh Island Fish will be served daily. All fish can be prepared in any of the following ways.

A'u - Hawaii's broad bill sword fish broiled and topped with roasted garlic, red bell pepper ragou and served with crushed potatoes.
Mahi Mahi - Famous Hawaiian game fish, sauteed with macadamia nuts, finished with white wine and topped with lemon butter.
Ono - A game fish known as Wahoo. Quick broiled to retain moisture, served with wild grain rice and topped with lemon butter.
Ahi - Yellowfin Tuna, Quick broiled to your order and served with teriaki glaze, pickled ginger, black sesame, and white rice.
Opah - Moon Fish, fast baked with tomatoes onions, capers and topped with sundried tomatoe and basil butter sauce (when available)
Hawaiian Salmon - Hawaii's Rainbow Runner. Chef's preperation. Please ask your server.
Ulua - Hawaii's Pompano. Pesto crusted then sauteed with garlic butter and white wine then topped with an Herb Buerre Blanc
Hapupu'u - Hawaiian Sea Bass "Poormans Lobster". Broiled and served with drawn butter. (when available)
Uku - Hawaii's gray snapper, grilled then topped with a sweet vietnamese chili garlic butter sauce and served with white rice.
Lehi - Shallow Water Pink Snapper. Poached in a court boullion and topped with a tarragon caper cream.
Opakapaka - Deep Sea Pink Snapper. Sauteed with white wine and garlic butter, topped with a Buerre Fondue Sauce.
Onaga - Red Snapper. The premium of all bottom fish. Sauteed in White wine and butter and topped with sauce Mousseline.
